Bersihkan kaki lembu dengan air dari segala kekotoran.<br />
2. Sediakan bara api untuk membakar kaki lembu. Bakar kaki hingga hangus/hingga bulu-bulu halusnya terbakar. Kikis bahagian terbakar/bahagian hitam hingga bersih.Jika masih ada bulu-bulu yang tinggal bakar lagi dan kikis lagi. Proses ini perlu dibuat berulang kali hingga semua bulu-bulu pada kaki lembu tidak kelihatan. Caranya sama kikis dengan menggunakan pisau/parang kecil. Buang bahagian tapak kaki lembu yang keras dan hanya ambil bahagian yang lembut/rawan sahaja. Apabila kaki lembu sudah cukup bersih dan nampak putih (nampak isi dalamnya), hiris/lapah bahagian kulit/keting yang lembut itu hingga semuanya tanggal dari tulangnya termasuk bahagian rawan di tapak kakinya. Kemudian bahagian yang dihiris tadi dihiris pula halus2 memanjang anggaran 1 1/2 inci panjang.<br />
3. Hirisan kulit/keting lembu tadi dibasuh dari habuk-habuk yang melekat dan tapis kemudian direbus dengan air yang banyak sehingga betul2 lembut dan kembang (ambil masa yang lama). Selepas direbus ia akan mengembang dan akan nampak jadi lebih banyak dari kuantiti asalnya. Apabila sudah lembut,tuangkan air rebusan tadi dan tapis kulit lembu tadi.<br />
4. Dalam periuk yang lain, masukkan air, air gula nisan, cili kisar, cuka dan garam secukup rasa hingga mendidih. Masukkan kulit lembu tadi dan masak hingga mesra.
